Hidden Bench's Rachis & Derma is a low-intervention natural wine series. Chantilly is their first sparkling riesling, produced with minimal sulphites in the Methode Ancestrale style. On the palate: zesty and creamy with a soft sparkling mousse; gooseberries, elderflower, white and yellow stone fruit, with lingering notes of ginger, subtle grapefruit and a bright lemony acid pop.
