This chocolate is made with a blend of Ritual's cacao nibs that are aged for several months in fresh bourbon whiskey barrels from High West Distillery, a local whiskey distillery in Park City, Utah. This process provides subtle notes of charred, white American Oak and light hints of bourbon whiskey. This is by no means a whiskey flavoured chocolate, but the flavour of the whiskey is detectable. What really stands out is the mellowing effect of the oak whiskey barrel—the chocolate tastes a bit softer around the edges and has a pleasant aroma and aftertaste.
